Ingredients:

  • 1 bag of your favorite tortilla chips
  • 1 cup of cooked and shredded chicken
  • 1 cup of shredded Mexican cheese blend
  • 1/2 cup of raspberry chipotle sauce
  • 1/4 cup of diced red onion
  • 1/4 cup of diced tomato
  • 1/4 cup of sliced black olives
  • 1/4 cup of chopped fresh cilantro

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Spread the tortilla chips out in a single layer on a baking sheet.
  3. Sprinkle the cooked and shredded chicken evenly over the chips.
  4. Drizzle the raspberry chipotle sauce over the chicken and chips.
  5. Sprinkle the shredded cheese, red onion, tomato, and black olives over the top.

  • 1 teaspoon of ground cumin
  • 1 teaspoon of dried oregano
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper

Instructions:

  1. Place the pork roast in a slow cooker.
  2. In a separate bowl, whisk together the brown sugar, soy sauce, water, apple cider vinegar, minced garlic, cumin, oregano, salt, and black pepper.
