World’s Best Bran Muffins

Ingredients:

  • 1 cup wheat bran
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 egg
  • 3/4 cup brown sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup raisins (optional)

Instructions:

  1. In a mixing bowl, combine the wheat bran and buttermilk. Let it sit for about 10 minutes to allow the bran to soften.
  2. Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
  3. In a separate bowl, mix together the vegetable oil, egg, brown sugar, and vanilla extract. Add this mixture to the bran and buttermilk mixture. Stir well.
  4. In another bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add this dry mixture to the wet mixture, stirring until just combined.
  5. If desired, fold in the raisins.
  6. Fill each muffin cup about two-thirds full with the batter.
  7. Bake for approximately 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Remove from the oven and let the muffins cool for a few minutes before transferring them to a wire rack to cool completely.

These bran muffins are simply irresistible, and they make a great addition to your breakfast routine. The bran adds a lovely texture, while the brown sugar gives them just the right amount of sweetness. Enjoy them warm or at room temperature with a pat of butter or a dollop of your favorite jam. They also freeze well, so you can make a big batch and enjoy them whenever you’re in the mood for a wholesome treat.
